Central New York winters can be rough, but our summers are beautiful. We’ve been enjoying the fresh produce from the local Farmers’ Market. My sister and favorite photographer, Alice, prepared this delicious protein-packed vegan falafel salad and it is delicious! The tart cider vinaigrette is easy to make and gives it a wonderful flavor.
Alice used broccoli, tomatoes, carrots, cucumbers, and spinach, but feel free to substitute depending on what you like and what is available. For extra protein and flavor, she added falafel, edamame, slivered almonds, and nutritional yeast.

Falafel should not be given to dogs because it contains garlic and onion. However, feel free to give your pup some carrots!
